July 26 – Steph of A Whisk and A Spoon – picked Creamy Dark Chocolate Sorbet on page 431 of BFMHTY by Dorie Greenspan.
This has only a few ingredients and is silly easy. Pop the milk, water, sugar and dark chocolate in a saucepan. Simmer for 5 minutes (I really want to know why 5 minutes. I love understanding why things are done in pastry work.)
Leave it in the fridge to chill out and then into the ice cream maker for a churn.
I liked this a lot. I also used it as the filling for the ice cream tart that was chosen back in April. Post to follow.
