For this weeks TWD, Macduff of The Lonely Sidecar– choose Cafe Volcano Cookies, from page 153 of Baking From My Home To Yours By Dorie Greenspan.
These cookies are a coffee meringue (in the simplest sense of being egg, sugar and coffee, no whipping required). Toasted nuts are folded through. They are dolloped out on a baking tray and 20 some minutes later you are done.
These are nice and may be a good home for leftover egg whites for me (If I can pull myself away from macaroons and marshmallows).
