TWD- Burnt Sugar Ice Cream

May 4, 2010- Becky of Project Domestication chose Burnt Sugar Ice Cream on page 432 of Baking From My Home To Yours by Dorie Greenspan.

Caramel taken to the edge is burnt sugar and golly, if done right it is an amazing thing.  Done for 30 seconds too long and you need to soak the pan and start again!  Anyway, I have gotten quite comfortable with making caramel over the last couple of years.  I am converted to Sheree Yards technique of leaving the lid on the pan for the first few minutes to get the steam to wash any stray sugar crystals back into the mix.

So once the caramel was made milk and cream get added in you dissolve any cheeky caramel and you proceed to make custard.

Easy Peasy.

Then into the trusty ice cream maker and onto burnt sugar ice cream happiness .

The caramel is the dominate player in this ice cream and I like that way.  I think I have some dark chocolate glaze lurking in the freezer that would live happily ever after with this ice cream (well until it was consumed with a greedy flourish).
