TWD- Espresso Chocolate Shortbread Cookies

I have come up with (for me) a novel excuse for why I am running a little late for my posting.  I left my laptop at work.  Yeah, excuses no matter how true generally come off sounding a touch shall I say lame…

It IS still the 31st.  I am about to start getting ready to go out for my birthday dinner.  I am going to Char, here is a link to their menu.  I thinks, I will be having the watermelon salad with spicy squid to start and for mains tossing up between the pork belly and the duck.   Char also do amazing steaks, but my hubby gets those and I have right of pillage off his plate- so why not diversify!

Right-o back to the post.  These are a simple shortbread spiked with espresso powder and dark chocolate shards.  Mine cracked a bit when I tried to slice them fresh from the fridge (the chunky nature of the chocolate probably didn’t help either) but other than that quite good.  Not too sweet.  The coffee is quietly in the background and even folk who aren’t mad for coffee (my mum for instance) liked these.

  3. Some of mine cracked as well when I was cutting them. They were still tasty, though. They look great!

  4. Why is it that when I pile cookies on top of each other they look like a pile of crumbs, while yours look so enticing? Apparently it is the diversity of our skill either behind the stove/oven or the lens. Must be the later, my food is at least edible if not photogenic! I had the same cracking issue as you. I know the warmer the dough the fewer the cracks, but then again, the warmer the dough the softer the dough. What is a gal to do? Thanks for baking along with me this week, I’m glad you liked these.
