TWD- Double Apple Bundt Cake

October 5, 2010– Lynne of Honey Muffin chose Double Apple Bundt Cake on pages 184 and 185 from Baking From My Home To Yours by Dorie Greenspan.

Apple butter isn’t available in my part of the world. It was hard to get around apple butter being a key ingredient for this cake so I found this recipe.  The apple butter making was fairly straight forward.  I made a quarter batch which was just enough for the cup required.  I also tweaked the technique a bit and started the 2nd cooking off on the stove and then once I had made a good start popped it into the oven at a low heat to finish it off.  Worked a treat.

The recipe above makes a fairly spiced apple butter and once mixed with the spices called for in the cake  gave an end result not too far from gingerbread.  Tasty, but just on the edge of too much spice.

Overall a nice cake, quite moist and the boys like it lots.
