TWD- Fold over Pear Torte

October 12, 2010– Cakelaw of Laws of the Kitchen selected Fold-Over Pear Torte on pages 348 and 349 from Dorie Greenspans Baking From My Home To Yours.

Not a lot of fold over for my Torte.  Back to the 35C pastry problem.  Fridge cold it breaks and within moments it becomes mush.  Oh well, other than pastry issues I live in such a wonderful place that I am willing to accept a lattice crust is a wishful though for most of the year.

This is a deceptively complicated pie.  No really tricky parts, but time intensive certainly.  I may have needed to bake mine for a few minutes more as some of the custard filling was still a bit oozy.  The menfolk all loved it and I was requested not to take the leftovers into work as there would be no issue with finishing it off.

I used dried cranberries and some Packham pears in this and it was lovely.  They happened to be the dried fruit and the front of the pantry!

This was lovely.  Now go and check the blogroll for all the other tortes out there.

  1. Your torte turned out really well. Mine didn’t have much fold-over either. Thanks for baking along with me this week.
