October 12, 2010– Cakelaw of Laws of the Kitchen selected Fold-Over Pear Torte on pages 348 and 349 from Dorie Greenspans Baking From My Home To Yours.
Not a lot of fold over for my Torte. Back to the 35C pastry problem. Fridge cold it breaks and within moments it becomes mush. Oh well, other than pastry issues I live in such a wonderful place that I am willing to accept a lattice crust is a wishful though for most of the year.
This is a deceptively complicated pie. No really tricky parts, but time intensive certainly. I may have needed to bake mine for a few minutes more as some of the custard filling was still a bit oozy. The menfolk all loved it and I was requested not to take the leftovers into work as there would be no issue with finishing it off.
