Way back in 2009- September 15- Julie of Someone’s in the Kitchen picked Flaky Apple Turnovers, pages 316 and 317 of Baking From My Home To Yours by Dorie Greenspan. I am still working through a few recipes I have missed or that were done before I started. This is one of those babies.
This is not a hard recipe. It does involve a touch of prior planning which is why I have put it off for 18 months. Essentially you make a dough chill it, roll it, business letter fold it, chill it, roll it and go. Can I say for the record working with such butter and sour cream rich doughs is so freaking hard when it is a constant 30C+.
That said mine worked out well. You can see the flaky layers in the photo above. I did a few turnovers and then decided to go individual open faced tart instead. The turnovers had a juicier filling but the reduction in stress (for the mini tarts) made it worthwhile.
Glad I took the time to make these despite my temp grumbles!
