TWD- Basic Biscuits -Catch up

For October 11, 2011 – Jennifer of Cooking for Comfort chose Basic Biscuits on page 21 of BFMHTY by Dorie Greenspan.

Australians take their scones (biscuits) seriously.  Here is an article from the Sydney Morning Herald devoted to the subject.  For anyone trying to replicate recipes Self Raising flour is unbleached (plain) flour with baking powder premixed in.  The ratio is 1 cup of plain flour to 2 teaspoons of baking powder.  Sift to mix and you are good to go.

I am running a bit behind – my lovely in laws came for a visit and I made these for them when they got up to sunny Darwin.  In laws were not up for cheesy photos but Liam- always happy to ham it up.

I did my grated butter (stored in the freezer) trick for these to minimise the handling time in our 90F heat.  I also used buttermilk for the record.

Look at the handsome chunks of butter in the dough.  You can see in the first photo how the lamination effect worked out for me.
