TWD- Cherry Rhubarb Double Crisp

April 12, 2011 – Sarah of Teapots and Cakestands chose Strawberry Rhubarb Double Crisp on pages 420 and 421.  I had to make a sub due to local availabilities.

I really thought I would have to give this recipe a miss.  Last week there was no rhubarb to be found in Darwin.  This week there suddenly was- and even better it was lovely and fresh (but $6 for 1lb).  The strawberries were no so fab and were about $6 for 8oz.  I could justify the rhubarb but not the strawberries-  so a jar of cherries was a reasonable sub.

I like this desert a lot.  I went back for seconds- which is unusual for me (well, seconds immediately after firsts is unusual for me).  I reduced the sugar in the filling by 1/4 cup- I like to pucker up with tart things.

  2. I bet the cherries tasted good. No rhuburb in my smallish town but the berries were beautiful and inexpensive. I subbed a bag of frozen mixed fruit. It was good, loved the ginger. I’ll make it again when my garden rhuburb is up! Have a great day.

  6. I’m sure the substitutions were fine. I thought this was a bit too sweet too, but I’m sure I could solve that by serving it with ice cream.

  9. That is expensive! I’ve never tried rhubarb with cherries, but it sounds good. I’m always happy to find another rhubarb pairing–thanks!
